Orecchiette means "little ears," . Another name for this shape is Orecchie di Prete, which means the ears of the priest. This is the most famous pasta from Puglia and southern Italy. Traditionally, it is made by pressing the dough over your thumb. In the south this particular pasta is served with sausage, rapini, olive oil and red pepper flakes. The shape also lends itself to holding hearty sauces and soups like a little cup.

The kids just love this shape and it's easy to get vegetables into them this way.  Use lots of water when you boils them so they don't get gummy.
