The Giachi family from the Chianti Classico zone has been involved in the olive oil trade for generations.Their premium olive oils have been produced using the traditional cold press method, earning awards if excellence in many of the world's markets.

• Primolio - the very first pressing of olives for oil
• All olives are hand-picked within the first ten days of November and immediately cold pressed in order to conserve as much as possible the freshness of this early-picked fruit
• After pressing, the oil is stored in cool spaces and filtered with cotton pads before bottling, in order to avoid vegetal water deposits which would alter and compromise the taste.
